Ciresa Quartirolo Lombardo PDO has strong ties with its homeland. Indeed, it is still produced by following the old local traditions.

Quartirolo Lombardo PDO is a squared, whole cow’s milk cheese. It has a mild and crumbly ivory paste, with a thin pale rind and light, natural mould. It is chalky, with slight lumpy texture.


Ciresa extends the curing of its Quartirolo Lombardo PDO in order to guarantee its distinctive and aromatic taste. The delicate flavour of the younger Quartirolo Lombardo PDO becomes stronger and more aromatic upon ripening.

For its unique characteristics, it has been granted the PDO designation.
