Gorgonzola PDO
Gorgonzola is one of the world's oldest blue-veined cheeses.
Ciresa PDO Gorgonzola is a cow’s milk cheese, with a soft, creamy paste. Gorgonzola cheese is clearly recognisable from its grey-light blue veins (named “erborinatura”) in the paste. These veins are due to the presence of mould (beneficial for our health) in the cheese paste. These moulds mature during the ripening of PDO Gorgonzola to give the cheese its unique look.
On its surface, there is a slightly rough rind.
This cheese is characterised by its unique, intense flavour (sweet but strong) and its unmistakable aroma.
Our PDO Gorgonzola is cured for 60 days, more than those stated by the consortium to be granted the designation of origin.
Our PDO Gorgonzola is produced in our factory in Cameri, thanks to the old tradition in the processing of this cheese.
