Produced through manual processing, they are raw milk cow’s cheeses.
Cimonino is cylindrical in shape, while Montanaro is round.
They are recognisable by a pink aromatic paste, crumbly in texture.
The traditional aging give these cheeses their typical intense taste, perfect to be paired with oil and pepper.
